I am not a gourmet goddess, nor do I really care to be. Don’t get me wrong, I enjoy both cooking and eating delicious food. I just don’t want to spend over 30 minutes of prep time creating a dish. My evening down time is too precious to spend slaving away in the kitchen. Therefore, you can be rest assured that any recipe I feature on this blog will be simple, quick, and of course healthy.
Today’s recipe comes from a cookbook that my sister Jodi created for me.

This breakfast is one of Stephen’s favorites. He is always requesting that I make him Jodi’s Oatmeal Pancakes.
Ingredients:
1 c old fasioned oats
2 c buttermilk (I use nonfat.)
1T oil (I use canola.)
1 egg
2 egg whites
1t vanilla extract
3T sucanat (or brown sugar)
1 1/2 c whole wheat flour
1t baking powder
1t baking soda
Directions:
- In a large bowl combine oatmeal and buttermilk. Let stand softening for 2 minutes. Beat in oil, eggs, and vanilla.
- In a small bowl, combine dry ingredients. Add dry ingredients to wet ingredients, stirring until combined.
- Coat griddle with cooking spray and heat stove top to medium.
- Pour approximately 1/4 cup of batter onto the griddle, and when you see bubbles, flip.
I don’t know what it is, but usually pancake recipes that call for all whole wheat flour taste terrible. Maybe it’s the addition of the oats, but these taste great. They are scrumptious when topped with almond butter and/or agave nectar.
This recipe makes about 10 large pancakes. I often prepare a double batch and freeze what I can’t eat in a few days’ time.
Side note: since Grooveshark is all the blogger rage as of late, I decided to give it a try, and I was pleasantly surprised. It features artists that I never would have expected. Yay for The Films and Jump, Little Children!
