Back on Track-Part Deux

Continuing with the Back on Track theme, here are my eats from yesterday.

 

Yesterday morning I was craving some fruits and veggies.  So I made a delicious Green Monster to curb my appetite.

3 cups spinach

6 frozen strawberries

3/4 cup mixed berries (raspberries, blueberries, blackberries)

1 cup Almond Breeze

1 small banana

2T flax seeds  (not pictured)

After all this traveling, it was just what the doctor ordered!

 

 

Lunch was leftover Red Curry from last night.

Shortly after I had an apple as a snack.

A few hours later, a carrot.

As a pre-workout snack, I had 3 handfuls of pumpkin seeds.  Probably close to 3/4 cup.

And about 4 oz. of papaya juice.

Well, it’s called Papaya Nectar, but if you look at the label, there is little papaya to be found.  It still tastes great!

 

 

While I was at the gym, Stephen whipped up a curried adzuki bean soup inspired by this recipe.  Stephen’s recipe will be posted later today!

We paired the soup with a glass of wine.

Dessert was a 100 calorie bag of buttered popcorn.

I know better than to eat this stuff.  But it is so, so delicious.  It is something that I eat regularly and doubt I will ever give up.  And yes, I am aware of the artificial butter issue.

As I munched, I sipped on some Traditional Medicinals tea.  I love this stuff, but I do feel like every flavor tastes the same!  Thankfully, I enjoy the taste of anise.

After being away from my apartment for over a week, I returned to heaps of mail.  I was excited to receive an envelope from Lexi of The Ramblings of a Health Student.

 

A few weeks ago, I won two back-to-back giveaways hosted on her blog.  I was mailed a coupon for free Nasoya product as well as 30 or so Stevia in the Raw samples.

Well folks, it is freezing here in South Carolina.  It surely hasn’t been this cold in a long time!

Like my festive house slippers?  I picked them up at Target’s after Christmas sale for $2.50.  They are helping to keep my feet warm, as I am stubborn and refuse to turn the temperature in my apartment higher than 65 degrees.

Stephen and I are going to a casual party at the house of my friend’s fiancé.  I haven’t seen my friend in awhile, so I’m excited!
