I have been thoroughly enjoying my 2 week break. Unfortunately, it is nearing its end, and I must re-enter the real world on Monday. Because I have been going to bed around 11 and waking up at 8 for most of my time off, I have a feeling that my first 5 a.m. wake-up call of the 2010 is going to be torturous!
When I awoke yesterday morning and sifted through my refrigerator and cabinets, I realized that I could seriously use a trip to the grocery store. I’m sorely lacking in fruits and veggies.
I concocted this breakfast.
Fat free plain yogurt with almond butter and pear butter. And a clementine on the side.
Of course I included some black tea.
The breakfast didn’t hold me over long. Around 10:30 I had some celery with hummus. I sprinkled a bit of red pepper on top for an extra kick.
Stephen and I decided to do some more shopping. So before we left the house, I created this…
A kale and mozzarella cheese sandwich on a whole wheat bun.
Now I know that any family member who is reading this post is shaking their head and laughing. I’m teased mercilessly in my family for my strange food concoctions. Oh well. Although it may not look appetizing, it was actually really tasty. I put it in the microwave for at 45 seconds to melt the cheese, and yes, there is cheese under that hefty pile of kale.
Stephen and I shopped til we dropped. We ventured to the outlet malls where I may have purchased a few clothing items at Gap and J.Crew as well as some warm fuzzy socks from Bath and Body Works. Stephen was patient the entire time. He’s usually a good shopping buddy.
After the outlet mall excursion we headed to Best Buy where he used a gift card to purchase a new PS3 game.
We stopped by the grocery store to buy some more whole wheat bread to eat alongside our Curried Adzuki Bean Soup.
While Stephen was searching for bread, I discovered these chips.
Food Should Taste Good jalapeño tortilla chips. And my-oh-my do these taste good! I probably ate close to 2 servings. Stephen and I were chowing down in the car. I never keep track of how many servings I’m eating of a particular food. I just follow my hunger.
When I returned to my apartment, I ate another clementine as a pre-workout snack.
The gym has been more challenging lately! On Tuesday I went to Group Power (a strength training class), and it was hard. I only took one week off! And during that time off, I made sure to strength train on my own. Two days after the class, my muscles are still sore to the touch!
Dinner was more Curried Adzuki Bean Soup. ![]()
Dessert was Edy’s Yogurt Blends Tart Honey. Remember when I reviewed the Tart Mango flavor?
This stuff was also rather tasty. I do prefer the mango though because it tastes more tart.
In this variety, the honey swirls taste like pure honey (although, don’t be fooled…they aren’t), and add an overall sweetness that detracts from the taste of the yogurt.
Later in the evening, while watching One Flew Over the Cuckoo’s Nest, I had two bags of this goodness.
100 calorie butter popcorn. Mmmmm Mmmmm GOOD!
So my day ended on a few processed foods, but I’m ok with it. It’s all about a healthy balance.
I’m off to the gym and the grocery store! I’m baking oatmeal cookies for tonight’s New Year’s Eve get together. Wish me luck! I’ve never tried this recipe, and I’m crossing my fingers that the cookies turn out to be edible!

We’re planning to eat black eyed peas and collard greens for good luck on New year’s Day! Not sure what we’re having with it yet…probably chicken…lol.

It is awesome! The brand that I bought, which I think is local, has no added sugars and only 10 calories per tablespoon.
