As I mentioned yesterday, I finally got to try my hand at juicing this past weekend. I had been anticipating this experience for a few months now.
Can you believe that for years, my parents have owned a juicer, and yet, they have never juiced a single piece of produce?! On Sunday, I set out to change this.
I researched potential newbie juicing recipes, and I finally settled on the advice of Alison from Mama’s Weeds. She is, of course, a master juicer who’s been known to throw fresh garlic into into her juices from time to time.
She suggested that I try the combo of lemon, apple, romaine lettuce, cucumber, and a bit of ginger. So, here’s what I ended up with:
Apple, lemon, cucumber, and spinach. (I only juiced about a cup of spinach.)![]()
And here’s the juicing beauty! It’s nothing fancy, but I’d bet it does the trick!
Or not.
It seems this appliance could not differentiate between juice and pulp. There is even a huge chunk lemon rind in my glass!
What a messy disaster! The juice did taste great though. Alison did not lead me astray.
One problem with juicing: what to do with the non-juice remnants? As I could not think of anything clever…
I ate them alongside breakfast, and they were actually rather tasty because there was a lot of juice left in the mix. I told you: I don’t waste food!

On to today’s eats:
Breakfast
My first attempt at both oats in a jar AND overnight oats.
Overnight oats were a big fat fail. Maybe this is because I used quick oats? Let’s just say that when I opened up the jar this morning, it looked just like it did when I prepped it last night. Oh well, nothing a little microwave action couldn’t fix!
I also gotta say that oats in a jar wasn’t “all that” for me. I just wasn’t tasting any of the nut butter goodness. I guess I scraped the jar rather clean before beginning the oats in a jar experiment?
Lunch
Bean soup that my ma mere sent home with me.
Dinner
Sweet potato with chickpeas, chili powder, and red pepper flakes. This combination is my “I’m feeling lazy and don’t want to cook” meal. I could honestly eat it every night for dinner and not get tired of it.
Plus more kale chips. This time with rosemary and garlic.

Annnnnnnnd…Since I went to my parents’ house this weekend, I have to share pictures of my kitties! (You know you’re excited.)
Bea and Irvin like to eat breakfast with their peeps. They know they aren’t allowed on the table, so they hang out on the arm of this bench and watch the meal activity.
Not sure why Beatrice thinks she fits on here…Let’s just say she’s lost her balance a few times…

Beatrice showing her neuroses. She tries to “cover up” Irvin’s wet food every single day. She can literally do this for five minutes at a time. We think she just doesn’t like the smell?
However, her hatred for this stuff has never kept her from sneaking a few bites.

I juice every morning. That’s all I have for breakfast. My Fav combo is Kale/Spinach/green apple/carrot/celery/collard greens/mustard greens.. yum!
I like carrot, cucumber, apple, celery and ginger.
I’ve actually never tried (veggie) juice but I want to! Except I might have to use a different brand of juicer because I’m not feelin’ the mess
It took me a while to perfect overnight oats; you have to get the liquid:oats ration justtttt right
omg! juicing seems like a headache for now…but I do wanna start making some smoothies.

The lemon in there looks a bit like an egg yolk.
I’m not a big fan of juice…I don’t like to drink stuff, I’d rather chew. I haven’t tried juicing yet, but I’d love to try a sip. Just can’t afford to buy a juicer and everything though!

I LOVE juicing! It is a huge part of my diet…! I love green juices…kale, spinach, apple, lemon, parsley even! So tasty. Also I really like lemon and ginger…especially warmed up…so delish.

i WISH i had a juicer, though! i’ve been wanting one for a really long time, but as a recent college grab whose funds aren’t exactly superb…well, let’s just say i need to start saving up!
