Breakfast
This morning I resisted the urge to throw my alarm clocks across the room, jumped out of bed, threw on my workout clothes, and I made myself this creation. ![]()
1/2 cup oats
1/4 cup unsweetened almond milk
1/4 cup light vanilla soymilk
half an apple (cooked with the oats)
lots of cinnamon
sprinkling of raisins (added after cooking)
Wow, was it good. I’m missing the convenience of the Green Monster in the car routine though. Oats take too long to cool down before they are edible, and these recent sit-down breakfasts have been cutting into my precious workout time!
I also sipped on 6 oz. juice with some Mighty Leaf Vanilla Bean Black Tea.
I had a great workout! After taking 3 days off due to my sickness, my body was rested and ready to go. I did 30 minutes on the elliptical while reading an Us magazine. Then I ran 3 miles on the treadmill. I tried to run at 7.0 as much as possible. When it got too challenging, I took a rest at 6.2.
I definitely think that my interval training has helped to increase my speed! I can’t wait for it to warm up, so that I can run outside with my Garmin again.
Lunch
Lunch could have been better.
The sweet potato was quite satisfying. The rice was just gross. I still ate it all. Sometimes not being able to waste food is a curse.
I got this “Rice Treat” at Amazing Savings some time ago. It was appealing because it only requires 2 minutes of cooking time in the microwave, and then it’s ready to go.
That’s my lesson for paying $1.79 for two servings of rice that would have tasted better had I made them from scratch.
Dinner
Once again, I was famished by 4:00, and I couldn’t bear the thought of taking the time to cook a long meal. So I had another go-to dinner. Eggs with veggies sautéed in extra virgin olive oil.
Some foods just don’t look as good as they taste.
And yes, I like my eggs slightly burnt. I hate runny yolks!
I wanted to incorporate a lot of veggies into my sauté, so I put the following into my Ninja:
-1 carrot
-1 celery stalk
-10 mushrooms
-1 onion
After 3, one second pulses, this stuff was chopped to bits. Itty bitty bits. Not quite what I was going for! The Ninja obviously takes food processing seriously. Oh well, at least the veggies were so small that they were cooked in no time!
When I was at the grocery store today, I stumbled upon this.
99 cent mustard greens that will likely be inedible in a day or two. This sparked my curiosity: what could I do with these? I haven’t had a mustard green in years.
Well, if I can make kale chips, why can’t I make mustard green chips?
There was no reason why I couldn’t. I added a bit of onion powder and garlic powder, and these tasted fab.

One cup of mustard greens has:
-348% RDA Vitamin K
-118% RDA Vitamin A
-65% RDA Vitamin C
-26% RDA Folate
Not to mention a slew of other vitamins and minerals in smaller amounts.
Spinach and collard green chips are next up on my list. What an easy way to sneak some greens into your diet!
Dessert
For the steep price of $1.89, I picked up this fruit at the grocery store today. The mere size of it piqued my interest. No kidding, it’s close to the size of my head.
It’s called a pomelo.
At first, I wasn’t feeling so bad about the price, since this was one honkin piece of fruit.
Until I took the skin off.
It’s difficult to tell, but this is more the size of your average, peeled orange.
And the taste…
It tasted good. Almost exactly like a grapefruit. Next time, I’ll save my money and buy a grapefruit instead.
FYI-Just like the grapefruit, don’t eat this baby’s fleshy membrane. It’s bitter.

Who else is getting excited about the final season of LOST? I know I am! I’ve seen the trailer (without sound) while at the gym. I’m pumped! Can’t decide if I will watch it during the season or wait until it comes out on DVD. (LOST episodes, with their unanswered questions, just need to be watched back-to-back.) But I’m afraid if I wait, I’ll catch wind of the season’s grand finale before I get the chance to view it. Decisions, decisions….
Anyone else a LOST fanatic?

I had that same disappointment about the pommelo, too. I couldn’t believe how dinky they were inside all that skin LOL!

Pomelos…learn something new every day! I’ve seen them before, but didn’t know what they were like. Now that I know that they’re simply a pain-in-the-butt-to-peel grapefruit, I’ll save the cash and get a grapefruit (mm!)!!
I loved Lost til last season and then it got to SciFi for me…hubby still loves it, though! I still like Jack…does that count?
I hate wasting food too! Unless it’s really disgusting, I’ll usually eat it.
I’ve actually never tried Mustard greens OR pomelo. *Mental note*
The wasting food issue always causes major tension between my best friend and me, especially when we travel together. I won’t eat something if I don’t want it, whereas she has to eat it because she can’t waste food. She gets so pissed at me! I do feel guilty for wasting foods at times- my eyes are bigger than my stomach!
I am so excited for lost. I can’t believe it’s the last season. I’m really looking forward to everything that’ll be revealed. I just hope they do a good job.
Breakfast looks great. And I’m glad there’s another person who’s having some trouble with Whittle My Middle. It’s kicking my butt haha.
Loved this particular post, Lily. I guess you got the love for well-done eggs from me! I use mustard greens like spinach as a green salad. Your ingenious idea for the chips is terrific. I had never heard of “chips” like that from greens until I read it in your post and you later gave me a sample. (Quite good!)

Just made kale chips today for the first time! SOoo delicious. I wonder if they are still able to keep the nutritional value of steaming them. I just splurged on a pomello…yes they’re pricey and taste similar to grapefruit, but I enjoy buying random large fruit because it makes me excited to have it and seems like a nice treat.

i never caught on to Lost…i don’t think I’ve ever watched an entire episode! there was a point where i wanted to start watching, but i had absolutely NO idea what was going on!
