Whoa, was it difficult to wake up this morning!  A long weekend of sleeping in definitely spoiled me.  Somehow I managed to get out of bed and make myself some cereal.

Breakfast

Nature’s Path Optimum Cranberry Ginger.  See that red tag that says $1.79?  Obviously I purchased this at Amazing Savings.  You certainly couldn’t find it anywhere else for that price!

I paired the cereal with vanilla almond milk, and I sprinkled chia seeds on top.

Breakfast always tastes better with 6 oz. of juice.

After breakfast, I high-tailed it to the gym.  My workout was not very intense:  I “ellipticaled” at a fairly easy pace for 52 minutes while reading a magazine.

Lunch

Lunch was leftovers of a concoction that I whipped up for dinner last night.

A few months ago, I bought some nutritional yeast at Earthfare, and I’ve been meaning to make something with it for awhile now.  Tonight was the night!

In case you have never heard of nutritional yeast, here’s the lowdown.

Nutritional yeast is a deactivated yeast.  Because of its nutty and cheesy taste, it is often used by vegans as a cheese substitute.  It is rich in B vitamins such as niacin, thiamine, biotin, and folic acid.  Nutritional yeast is also a great source of vitamin B12, which is why it is so popular among vegans and vegetarians, as B12 is most commonly found in animal products.

Vegan Macaroni N’ Cheese

(For the most part, I followed the recipe found here.)

Ingredients:

  • 1/2 cup nutritional yeast
  • 1/3 cup whole wheat flour
  • 1 cup vegetable broth
  • 1.5 cups water
  • 1.5 tbsp low sodium soy sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp jalapeño seasoning
  • 1/4 teaspoon dried basil
  • 1, 4-ounce can tomato sauce
  • 2 cups whole wheat macaroni, cooked

Directions:

  • Preheat oven to 350 degrees.
  • While preparing the sauce, cook whole wheat pasta, al dente.
  • Combine nutritional yeast and whole wheat flour in a saucepan.  Cooking over low heat, stir the mixture until lightly toasted.

  • Slowly add the vegetable broth, stirring to make a thick batter.
  • Add water 1/4 cup at a time until the sauce is smooth and slightly thick. 
  • Add remaining ingredients, except macaroni, and still well.  (Be sure to stir out ALL clumps!)

  • Place the cooked macaroni in a casserole dish and stir in the sauce.

  • Bake for 30 minutes, or until sauce bubbles
  • Let stand 15 minutes before serving.

  • Serve with veggie of your choice. :-)

I have been wanting to try nutritional yeast for some time now.  I’m so glad I finally got a chance!  This recipe, though it doesn’t taste quite like mac n’ cheese, is creamy, delicious, and packs quite a nutritional punch!

Note:  I am not a vegan.  And although I don’t eat meat very often, I do not consider myself a vegetarian either.  I simply enjoy trying a variety of foods.

On an exercise note, it was absolutely gorgeous here in SC today.  When I came home from work, sat down at my computer, and saw this sunny sky, I just knew that I had to get out and go for a run.

Since I’d already worked out today, I wanted to keep my run short, so I did a quick 2 miles.  Well, I don’t know if you could call it quick.  Here are the stats:

Mile 1- 8:22 (mostly flat with a few ups and downs)

Mile 2- 9:33 (all uphill at a fairly steep incline)

Fastest Pace: 6:23

These two miles were pretty tough! 

I’ve set a goal for myself to really focus on speed work for the next few weeks.  I’m considering signing up for a 10k in early March.  I’d like to run it in under 9 minute miles, but I think that may be setting the bar a bit high as it is really hilly and contains a murderous hill in the last mile.  We shall see…

    Sana, the dish definitely had the consistency of boxed mac n cheese, but it tasted somewhat different. More nutty and natural…less…salty?

  3. Nutritional yeast looks really cheesy actually. Gotta try some of that sometime.
    Most interesting ingredient I’ve tried lately was carob chips. Kind of like chocolate chips, but a little more earthy.

  4. Oh my gosh! I love that rice…I totally forgot all about it! I must add it to my grocery list. Right. This. Second.

    BTW, we eat a lot alike…I eat mostly vegetarian if you don’t count the whey protein and the occasional piece of fish. My personal trainer is TRYING to get me to toss in some chicken…but I’m resisting but not totally against the idea. ;-)

  6. I can’t say I’m a fan of vegan mac & cheese, but I love nutritional yeast. I sprinkle it on a lot of things, particularly pasta with marinara sauce, or my recently made kale chips.

    The weather here has been unusually nice too- it’s good to take advantage of it

    Of course when it’s in the 90′s+ in the summer and it’s a pleasant 75 up in Boston, I won’t be so jealous.

  18. I’ll admit, I’m not one to buy many new and crazy ingredients, as I usually end up buying them and then never using them again. The nutritional yeast is something I have heard about several times through blogs, and I am thinking of trying some, as it sounds like something that could be incorporated into many dishes! This pasta looks fabulous.

    By the way, for some reason your blog won’t enter into my blogroll. I try to put it there, but it refuses! Any ideas why??

    I love nutritional yeast sprinkled over popcorn. I spray the popcorn first with a mixture of soy sauce and lemon juice, then sprinkle on the yeast. Yummy!

    Most unusual ingredient I’ve cooked with recently? Ummmm…the abundance of zucchini, I’d have to say. But I did eat squash blossoms…my 95 year old grandma made breaded squash blossoms and sent some home with my dad for us to try. Yummmy!
