Earlier in the week, I made a delicious and nutritious recipe that I’d like to share with you all. The idea for this treat came from Susan at The Great Balancing Act. I recently discovered Susan’s blog, and she has quickly become one of my favorite bloggers. If you haven’t checked out her site, you should! She’s real, honest and eats simply, yet deliciously. I made a few adaptations to her recipe for Carrot Cake Protein Bars, which can be found here.
Carrot Papaya Squares
Ingredients
-
1 cup whole wheat flour
-
1.5 Tbsp. cinnamon
-
1/2 tsp. baking soda
-
1/4 tsp. salt
-
1/8 tsp. nutmeg
-
2 egg whites
-
1 whole egg (white + yolk)
-
1/2 cup demerara sugar
-
1/2 cup fat free plain yogurt
-
1/5 cups grated carrots
-
1.5 scoops vanilla whey protein
-
1 cup quick oats (Rolled will be fine.)
-
1/4 cup chopped, lightly sweetened, dried papaya
Directions
-
Mix dry ingredients.

Add wet ingredients and mix.
-
Grease an 8×8 pan with coconut oil, and pour batter into pan.

Bake at 350 degrees for 30-35 minutes. (Note: baking time may vary due to oven differences.)

Enjoy!
I’ve been eating these squares for breakfast
with Oikos greek yogurt and flaxseed meal.
Or an Oikos, almond butter, + pear butter combination.
I love these bars! They taste like a treat, and yet almost all of the ingredients pack a nutritional punch!

Speaking of Oikos, Stonyfield was kind enough to send me some free coupons so that I could sample different flavors of their greek yogurt. So far I’ve tried the vanilla and plain varieties. Expect a full review soon, but for now, let’s just say, I have a new favorite dessert!

I originally bought those chocolate chips for baking, but they are slowly disappearing as I consume them with greek yogurt.
You have got to try this combo. I’m serious!

Greek yogurt with chocolate chips looks awesome. I’ve tried regular yogurt with regular chocolate chips. But i love mint chocolate chip icecream, so I’m thinking this will be something similar to that. Sounds yum!

Carrot and papaya sound like a delicious combination. I think that would make a good lara bar too!! (Dried papaya, carrot and walnuts perhaps??)

They do include papaya. It’s the very last ingredient listed.
