Hey Blog World!

Big news!  I fixed the feed link in the top, right hand corner.  None of you should have trouble putting me in your Google Reader.  Please let me know if you do.  A special, special thanks to Seth @ Boy Meets Food for guiding me through the process!

Breakfast

In other big news, I’ve been experimenting up a storm in the LHP kitchen.  This morning, I had both mesquite and hemp seed on my oatmeal mixture.

The white and green things are hemp seeds.  The brown powder is mesquite.  The hemp seeds are pretty much tasteless, and the mesquite has a subtly sweet cinnamon/molasses-like taste.

I’ve also discovered a new favorite tea!  Tea can be harsh on my stomach in the morning, but this stuff tastes like fruit juice!  Well, as close as a tea could taste to fruit juice.  See the remnants of a red tag?  This was one of my Amazing Savings purchases.

I keep an entire bottle of Tone’s Southwest Chipotle Seasoning in my cabinet for instances such as these! 

Plus, oodles of tea, some Stevia, pumpkin seeds, and a nifty Hello Kitty lotion and calculator set.

I’ve been planning this dinner for a few days now, and I finally got a chance to make it tonight!

Portobella Mushroom Burger with Avocado Spread

(from About.com; makes 4 burgers)

Ingredients:

  • 4 medium portabella mushrooms
  • 1 medium onion, cut into 1/2 inch slices
  • 2 tbsp olive oil
  • 1 avocado, sliced
  • 2 tbsp plain Oikos (or any other plain yogurt)
  • 1 clove minced garlic (about 1 tsp.)
  • 4 hamburger buns (or bread of choice)
  • 4 roasted peppers, from a jar

Directions:

  • Add olive oil to large skillet.  Heat over medium heat until hot. 
  • Add portobella mushrooms, and onions.  Cook until tender (about 8 minutes).
  • Meanwhile, combine in a small bowl, 1/2 of the avocado, yogurt, and garlic.  Mash and stir until smooth.
  • Spoon onions and roasted peppers into mushroom cavities.  Top with leftover avocado slices. 
  • Spread smooth avocado mixture on the bottom of each bun.  Top with the stuffed portobella mushroom.

I had mine open-faced on Ezkiel 7 Sprouted Grains Bread.

This was GOOD.  And the healthy avocado fat is so filling!  This one sandwich seriously has me stuffed to the gills! 

After eating dinner, I experimented with my spelt flour and made some awesome muffins!  But I’m leaving those for a later post. :-)

I’m off to watch some Glee!  I’m super excited it came from Netflix today.  I’ve never seen it before, but I know I’m gonna love it!

I love Netflixing television series.    What are your favorites?  I need suggestions.  I’m running out of shows to watch!  I already follow so many…

Some of my faves are Dexter, Curb Your Enthusiasm, True Blood Weeds, Big Love, Make it or Break It, Ugly Betty, Project Runway, United States of Tara, The Hills, Laguna Beach, LOST, Mad Men, 30 Rock, The Office, and Rescue Me.

    The mushroom/avocado combination looks to die for!! I wish I didn’t just use the last portabella!!! Booooo I want that mushroom burger.

    Hemp seeds have always intrigued me- they’re so healthy! I want to make a hemp and almond butter… I bet it would be really good.
    Where do you find mesquite? And is it simmilar to the mesquite smoke flavor?

    & I completely agree, that Health Valley soup is very bland. I’m not a huge fan of their soups- the tomatoes taste like tin and the potatoes taste like purfume… or maybe it’s just me! ;-)

    I don’t watch too much tv but when I do…it’s trashy reality lol. The Kardashians are a favorite :)

She was always talking about it, and I thought it was the smoke flavor too! Actually, it’s not like that at all. It’s sweet tasting.

    I love the creaminess of avocado spread on bread :) Mmmm…and mushrooms are my lovers…
    Also, just glimpsed your last post but I LOVE Kombucha. The first time I tried it I was disgusted but since then I constantly crave it :P

    That burger looks great. Anything with avocado looks great to me, but especially a big ol’ mushroom.

    My all time favorite show is Six Feet Under. Have you seen it? So good. Definitely Netflix-worthy.

    omg! That portabello burger with avacado sounds sssoo good! wow. Great idea girl. Glee is one of my favorite shows, always makes me laugh although I keep forgetting when its on. My hubs just found a new tv series called The beast. It has Patrick Swayze in it. I just watched the trailer tonight and its pretty good. Its one of those FBI/crime show series. Not too bad. Anyways I hope you have a great night girl!!

    Try Brothers and Sisters-it is so well written. I think it is in series form now. Even I thought the sandwich looked good and I neither like mushrooms or avocado!

  24. YEAH!! Curb Your Enthusiasm is one of my favorites. Nick and I purchased HBO just to watch Seinfeld on that show in September. My dad is obsessed with Larry David.

    I have never made a portobella mushroom sandwich, shame on me. Yours looks amazing. I love that you used Greek yogurt and smashed avocado!

    I’ve been hoping to try Mesquite for some time now and your Oatmeal looks like the perfect test recipe! Besides the hemp and oats, what else went into your morning concoction?

    I added some almond butter on the side. That was it! I can’t remember if I used soymilk, almond milk, or water…I vary it from day to day.

    I liked it just fine. I didn’t taste much of a flavor, so I plan on adding hemp seed to pretty much everything!

    I love Netflixing shows too! I’m currently watching House and when I’m done with that I’m going to start on either Dexter or Madmen. Can’t decide yet! I also want to watch Entourage, The Good Wife, Castle, Curb Your Enthusiasm, Weeds and Big Love. So many shows so little time, haha.

    The burger was amazing! I used red onions and added balsamic vinegar in with the oil before I added the mushrooms. I did not use the yogurt as I did not have any. Thanks for the recipe.
