The Monday work day is over, and now it’s time to hit the gym.  I’ve scheduled some time with the elliptical as well as the Group Centergy class I attempt to attend weekly.  I have to admit, I have recently been cutting back on a.m. exercise in exchange for some extra hours of sleep.  Thankfully, on the days that I sleep in, I’ve consistently motivated myself to squeeze in an after work sweat session.

But before I hit the gym, let me share my weekend with you all.

Friday

Stephen and I attended a surprise birthday dinner for my dear friend Faith.  Faith thought she was going to dinner and a movie with two of her girlfriends.  When she arrived at Chicora Alley, her favorite restaurant, she was shocked to see a huge group of her closest friends and family.  She was definitely surprised!

For dinner, I chose the shrimp burrito.  It had shrimp, eggplant, plantains, spinach, goat cheese, roasted red peppers, and sautéed mushrooms.  It was served with pineapple rice, 3 different salsa, and a mixed green salad.

Saturday

Stephen and I finally went shopping at The Fresh Market.  There’s one about 10 minutes from my apartment that I’ve been wanting to check out.  It’s basically a smaller version of Whole Foods. 

We picked up a few goodies for dinner, and then we went to see Avatar in 3-D.  I really enjoyed Avatar.  Was it the movie of the year?  No.  The characters were too underdeveloped and the plot was too predictable.  But the graphics were amazing, and the story really did draw you in!

After the movie, we prepared a really good dinner!  Interestingly, this dinner idea came straight from the brain of Mr. Stephen, himself.

 

Guacamole and Kale Flatbread Pizza

We crisped flatbread in the oven at 350 for 7 minutes.  Then we mixed a 3:1 ratio of spicy guacamole (purchased at The Fresh Market) and tomato paste together to make our pizza sauce.  We topped the pizza with the guac/tomato paste mixture and some chopped, roasted garlic.

We added kale sautéed in canola oil, fresh mozzarella, and cilantro.

We baked our pizzas at 350 for 15 minutes, and here they are!

I was really impressed with Stephen’s idea!  I’ll be making another one of these for my dinner tonight.

Sunday

Although I’m not positive that I will be running a 10k in March, I’m following a training plan anyway.  Sunday, it called for a 7 mile run.

It’s been quite awhile since I’ve run that far.  I took it slow, running the distance in just over 10-minute miles.

After the run, Stephen and I were off to a late Sunday lunch at my parents’ house.

My mom made a whole wheat pasta salad with grilled pimento cheese sandwiches.

She also made “Impossible Pie,” which is basically a coconut custard pie.

I love Sunday lunches with my parents. :-)

Before lunch, Stephen, the fam, and I hit up my hometown library’s book sale.  Once a month, they sell old library books for incredibly cheap prices!

books2 books    I got quite the collection of books and magazines for $12!  I can’t wait to read them all.

So now I’m off to work out!  Make it or Break It tonight!  It’s the prom episode. :-)

Do any of you buy books?  I rarely do, unless I can find a good deal.  I prefer to borrow books for free from the local library.

  4. omgoodness, that flatbread pizza looks BOMB. So does the grilled cheese. Yum. Clearly I have a thing for cheese :P

    I don’t usually buy books. I do, however, seem to get a lot of gift cards to Barnes and Noble! So I usually use them to get books. My recent grabs have been “Good Calories, Bad Calories” by Gary Taubes and “In Defense of Food” by Michael Pollan =)

    The pizza looks very good..especially the one that looks like it has feta on it (i love feta cheese).

    as far as books go…i really like adventure and myster novels. Clive Cussler is one of my favs. I am currently keeping my eye out for cheap copies of Sherlock Holmes mysteries along with other classics.

  8. holy yum! first of all that pizza looks awesome!! I would never think to mix guac and tomato to make a sauce!!! wow what a unique idea, I bet that was SUPER tasty! :)

    the pimento cheese looks so good! i dont think I have ever had pimento cheese. Nothing liek mama’s cooking, right??

    You asked me what an exercise speciliast is. BAsically I run a corporate fitness center with my manager. I do everything from personal training, to teach group fitness to wellness/nutrition promotion to the company. I work for a health mananagement company that runs healthclubs inside corporate companies, so I work inside of a business building (in their gym) and we are contractors to them, so we work with them in wellness promotion etc. Its fun! I love it!

    Ooh, guacamole with tomato paste is a good idea. I pretty much think guacamole is a good idea in any form!

    Sweet deal on the books and magazines. I sometimes buy books, but I usually end up borrowing from my mother when I go home to visit.

    Steal on the books and magazines! While I don’t purchase many books, I am more likely to purchase something like a cookbook that I would use over and over again…and I certainly wouldn’t have passed up that deal! I mean…steal :)

    I love libraries! :) I don’t understand why people buy books (unless its a favorite and you will constantly be going back to it!) But it’s awesome because they are FREE! I live on technically an Island which has about 15 towns and each town has a library but they all are in the same system, so if the library in my town doesnt have a book I want,they can get it from another library within a few days! :) It’s awesome! I love your blog Lily! :-D

  13. I prefer the library! But, I am a bookworm. I never used to be, but I’ve read about 15 books in the past year, wow!

    I agree with you about Avatar. Not the movie of the year, but very entertaining.

    Your pizzas looks absolutely fantastic. Seriously, wow! Why is the guacamole brown? Just curious.

    I workout in the morning but if I think I need more sleep, I will skip the workout and leave it for later. Sleep is more important, it makes or breaks my whole day!

  16. I’m a buyer . . although I have been trying the cookbooks out at the library. I found some I like and went ahead and purchased them. I hadn’t made all of the recipes that I wanted to try yet before it was due.

    I was confused by the guac+tomato paste combo at first. I thought it was peanut butter. But I bet it was tasty!

    I buy books when they are on sale… I would ratehr borrow from the library but the problem is the libarary is 30 min from our house (no traffic) but the road to the library has traffic on Sunday at 4 AM.. so I never go.

    That pizza looks amazing girl! wow. I love all the awesome flavors you have going on. Lunch at your parents house sounds great. I live across the country from my family and I miss those things! Home made pimento cheese sounds fantastic! I haven’t had that in ages. Its ssooo good though. Im so glad you had a great!

    I buy so many books, but usually I try to get them from half.com. Its nice because sometimes I get books for as low as $.10 (seriously!) Of course shipping is still $2-3 but then I get to keep the book. Of course I love the library too…

    The pizzas look delish!
