My baked good of choice is the muffin. Muffins are versatile. You can eat them for breakfast, dessert, or an afternoon snack.
After receiving spelt flour from an iHerb giveaway, I was eager to bake some muffins using my new flour.
About Spelt Flour
You can substitute spelt flour anywhere you would use whole wheat or all purpose flour. It is closely related to wheat, but many people with wheat intolerances can still enjoy its nutty, sweet flavor. It also contains more protein than whole wheat flour.
Pumpkin Spelt Muffins
(makes 12 muffins)
Ingredients:
- 2 cups spelt flour
- 2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/2 tsp all spice
- 1/8 tsp ground cloves
- 3/4 cup sucanat
- 1/2 tsp maca powder (Optional. You can add more if you like, but be careful, this stuff is STRONG)
- 1 1/2 cup canned pumpkin puree
- 1 egg
- 1/2 cup plain Oikos (or other yogurt, regular or Greek)
- 1/8 cup unsweetened applesauce
- 1/8 cup canola oil
- 1 tsp vanilla
Directions:
- Preheat oven to 350 degrees.
- In a large bowl, mix together spelt flour, baking soda, baking powder, salt, cinnamon, all spice, ground coves, and maca powder.
- In a separate bowl, mix together egg and yogurt. Add the vanilla and sucanat. Combine. Finally, whisk in pumpkin puree.
- Add wet ingredients to dry ingredients.
- Grease muffin wells with coconut oil (or nonstick spray).
- Distribute batter evenly among muffin wells.
- Bake for approximately 25 minutes.
- Remove muffins from oven and let cool 5 minutes before serving.
Even Stephen, who is leery of healthy substitutions, loved these.
I had to constantly remind him that he could have no more than one a day! I wanted these to be around when it came time for breakfast.
Thankfully, I was able to enjoy a few with almond butter and flaxseed meal.

It’s almost Thursday! Valentine’s Day is drawing near… I have always adored Valentine’s Day. I think the massive amounts of sweets associated with the holiday have something to do with it.

I love baking with spelt flour. Favorite muffins would have to be the same as Chelsea. I really wanted to be original, but I’d just be making something up. Can’t beat that combo!

Anyways – my favorite muffin is anything with apple
I can eat spelt on my wheat free diet, wah hoo!! I haven’t tried it, but I am planning on it soon. These muffins look great. My favorite kind of muffin is blueberry (boring). I really enjoy blueberry muffins with a big cup of coffee, or milk! Yum. I also like bran muffins for some reason. I just think the taste is so unique, and of course they are healthy (well, healthIER than some muffins..)!

Ohh those look great! My fave unhealthy muffin is chocolate chip. I found a recipe for delicious apple walnut muffins with whole wheat flour that are my fave “healthy” muffins

I’m glad you posted about spelt flour. I’ve been wanting to try it, but leery myself. It just doesn’t sound tasty…what a logical reason to not give something a shot, eh? : ) The muffins look great!

I pretty much like any muffins as long as they don’t have raisins in them.
It tastes terrible!!!! I’m trying to get rid of it by putting a small bit at a time in my baked goods.

I have recent started a diet to be more alkaline. Finding recipes that are good is hard. But your pumpkin muffins are wonderful. Taste, texture, fullness of the muffin, were exceptional. Thank you so much. We love them and will be making them often.

I just made these muffins, and ahhhhh! I was soooo excited, but they are soooo incredibly bitter/possibly metallic. I use only non-aluminum baking powder… any ideas on what happened to mine?? They don’t look nearly as delicious as yours, and I can barely handle the taste. My sweet 2yr old was so excited about muffins that he doesn’t care, but what did I do wrong??!
Oh no! Did you by any chance add more maca powder than the recipe calls for? Maca is really bitter and chalky and tastes absolutely terrible IMO.
No, didn’t even use maca but everything else was the same. Wondering if the chemical reaction between my yogurt and the soda/ powder didn’t work?? Not sure, but your recipe looks awesome!! I will try again when my wounds have healed
These are so yummy! I’ve already made my second batch! I used stevia due to the fact that I am on a “no sugar” detox. Thankfully spelt flour and all the other ingredients were allowed! Also, I didn’t have applesauce, so I used 1/4 cup of olive oil. Thanks for sharing this!
