Walnut Oil Pesto Pasta

I made the BEST dinner tonight.  Seriously.  Out of this world!

Sticking with the theme of walnut oil, I present to you…

Walnut Oil Pesto Pasta 

Ingredients:

  • Walnut Oil Pesto* (recipe below)
  • 2 cups whole wheat pasta
  • 1 cup grape tomatoes
  • asparagus (As much as you want!)
  • 1/4 tsp red pepper flakes
  • 1 TBSP canola oil

 

Directions:

  • Bring pot of water to boil, and begin cooking pasta.
  • Sautee asparagus and red pepper flakes for about 3 minutes, add grape tomatoes.  Cook veggies for 2 more minutes.  Remove from heat.

Making pesto is so simple.  All I did was put the following ingredients into my Ninja:

  • 3 cups basil leaves
  • 3 cloves garlic, roughly chopped
  • 3 TBSP grated parmesan cheese
  • 1/2 cup walnut oil
  • salt, to taste

It literally took less than one minute to create this creamy goodness.

Olympics time!  Women’s figure skating concludes tonight.  I hope I can keep myself awake as my eyelids are feeling quite heavy at the moment. 

I’m going to be very, very sad when the Olympics conclude.  When the 2008 summer Olympics ended, I was down for at least a week.  I get so into this stuff.  Real life trials and triumph!  It’s even better than a documentary.

Seriously, who isn’t rooting for this lady?

  1. that dinner looks fab! Esp the pesto… I am definitely going to try that! I am watching the Olympics too- anxiously awaiting the figure skaters! I don’t cook with unique oils but I’ve tried truffle oil for dipping bread in- so good!

  5. I have that walnut oil! I got it at TJ Maxx. They actually have a pretty nice cooking section. I haven’t used it much though (but I can’t see why not?!)

    pesto is glorious on everything! I’ve never experimented with walnut oil, does it taste nutty? I mostly use canola and olive oil, but have used cottonseed too. Looks really tasty!

    That pesto looks so delicious! Another good raw nut recipes to try is cashew cheese, if you haven’t tried it already! I haven’t really tried a lot of different oils im so use to using my olive oil :) I do use sesame oil though, it taste great when sauteing vegetables, it gives them such a light tasty flavor!

    I like pesto but have never made my own. I don’t know why; I’m sure homemade tastes way better than store-bought. I have a thing of pistachio oil that I don’t know what to do with. Pistachio pesto?

  11. my bf has been bothering me to make my own pesto. It looks easy…although I don’t have walnut oil I might give it try with olive oil. Mmm…pesto. BTW I haven’t really tried any different oils..I’m thinking I might try coconut oil!

  13. That pesto sounds great! I love it! I usually just buy the jarred stuff (bad blogger…I know!) I haven’t ever used Walnut oil either but I am always up for trying something new! :)

  14. its funny that you posted about pesto today because the one and only time i made it was when i was following gillians recipe. she is a total NUT. i joined her club once for 15 bucks a month because len and i thought we’d go on her diet. we lasted one day. it’s SOOO much work.

    I have used all sorts of oil. I really enjoy experimenting with them to see what sort of flavors I get. My favorites are grapeseed and olive oil. For salads, I love non toasted walnut oil though.

    Since my budget is a bit tight right now, do you think the pesto would work with a lower-end oil, like EVOO, for example?

    Ahhh! Your pesto looks amazing! I have never tried walnut oil (expensive) I bet it was great in the pesto. Sometimes when I make it, I add pine nuts.
