Much of the Same

I have been busy lately.  And my eating has reflected this.  I’ve been trying to eat as conveniently and healthfully as possible, and for all the stresses I’m dealing with right now, it could certainly be worse!  However, my eats have been painfully redundant. 

 

Breakfasts

I’ve been eating almost the same breakfast combo every morning for the past week and a half: coconut, cranberries, and Trader Joe’s Almond Flax butter.

Last week I rocked the same toppings with some Fruit Not Fat Granola (more to come on that in another post).  Delish!

Oh, look!  Here’s the same combo with Bob’s Red Mill 10-Grain Cereal.  I think that’s natural peanut butter though.

 

On Sunday, I decided to whip up a huge batch of Scottish oats.

So this week I’ve been continuing the cranberry/coconut/almond butter theme with a different medium.  Unbelievably, I’m not tired of this combination just yet.

 

Lunches

This weekend, Stephen and I finally cooked up this Amazing Savings purchase.

We added broth, carrots, celery, onions, and canned diced tomatoes.

Soup in a mug topped with mozzarella.  I’ve had this every day for lunch this week.  It was great the first time, but I’m really tired of it right now.  Too bad I have about 3 more lunches left with this stuff.

 

Dinners

Frozen pizza and frozen veggies have been my friend!

A serving size is one-third of this tiny pizza?  You have to be joking!  I pretty much always eat half.  That way, I have some left over for the next night.

Pizza has officially taken over my dinners.

These pizzas were ok.  Nothing amazing.  They satiated my hunger, and that’s really all I have had time to worry about this week.  But there is a light at the end of the tunnel…

 

SPRING BREAK!!!  It starts on Friday.  Yippee!

And just look at who I get to see exactly one week from today?  Max and Clara!!!  I can’t to see my favorite niece and nephew! :-)

    Granola bars, oatmeal, Mr. Noodles, salad… basically anything quick and easy!

    Most of the time when I am pressed for time happens when I am walking inbetween classes. My profs don’t like students to eat in class so I find myself snacking on some apple slices or granola bars as I walk from building to building.

  3. I’m sorry you’re so busy, that sucks! I’m all about the oatmeal when I’m busy…sweet or savoury and cheesey, it’s so quick! That and sandwiches. They’re quick to make and portable = win win!

  4. first of all, my eats have been the exact same thing also cause of work! boo!! But on the positive note, kashi pizzas are my favorite if it had to be frozen. Your eats are FINE my dear but when I’m pressed for time it’s a veggie pattie and sandwich thin topped with laughing cow cheese for me!

    My eats are always redundant! Which is one of the reasons why I don’t post what I eat everyday. It makes grocery shopping cheaper and makes it easier when it comes to making meals with a 1.5 year old tugging on me and needing attention asap. Yours still look great to me! :)

  6. I am totally like you…when I am busy or stressed I just tend to eat the same things too. Mainly because it is easy and I don’t have to spend any energy thinking about it!

  7. When Im stressed and pressed for time i revert to eating a lot of the same meals…. little thought is involved and quick easy foods! That soup looks so good with the cheese!!!

  8. i <3 frozen pizzas! they're delicious – especially when you're crunched for time. when i'm stressed i typically rely on crock pot meals or pasta. easy but still delicious!

  9. I’ve been stressed lately too. I tend to eat lots of “quick meals” when I’m stressed. Or I just end up eating out. Lots of bars, peanut butter sandwiches and smoothies for me.

    so lucky your spring break starts next week-mine is one week after that….can’t wait.
    when i am stressed i try not to do too much. i take something off my list and that alwasy helps :)

  12. I always turn to food when I’m stressed. Usually cereal, ice cream, chocolate, and pizza is always nice!

  14. I tend to eat more bars – clif bars, luna bars, lara bars, etc. when I’m short on time. Crunchy foods are definetly what I crave when I’m stressed!

    Hey Lily! Hope you have been doing well. When I saw that you were speaking about granola I thought you might be interested in my favorite granola. If you go over to mixmygranola.com you get to mix different granola/cereal bases with fruits, nuts, enhancements, and some other interesting ingredients. It can be pricey, but they do specials where you can recieve 10 or 15% off frequently. My favorite is the french vanilla granola base with kiwi, strawberries, chocolate chips, and cocoa powder

    Oooh your breakfast looks so good! I love those Kashi pizzas, and I know what you mean…my dinners lately have been frozen pizza or Amy’s burritos and spinach! I guess there are worse things we could eat though, right?

    It’s been a hell of a week for me this week…and I’ve been eating a lot of sweet stuff, which is weird for me since I don’t have much of a sweet tooth: granola bars, chocolate-covered almonds, M & M’s, etc.
    It sucks your creativity dry too…it takes so much energy to create a dish!

    Lunchtime is my worst situation–especially at work. I usually work out during my hour lunch break so I don’t have time to eat. I usually have a Lean Cusine/Smart One. They aren’t the healthiest–but they are low calories.

  21. I know what you mean about leftovers- they’re great for a day or 2 but you reach a breaking point lol. That’s why I freeze it! So when I’m busy and don’t have the time to make anything I can just microwave it :)

  22. I think it’s totally fine to eat the same thing when you’re stressed and pressed for time. I think as food bloggers we will the need to have to change it up all.the.time. But I think it’s ok when we don’t :) Have a great weekend!

  23. I’m like you– my eats get really repetitive when my schedule gets busy. Better to be redundant but healthy than to rely on junk, right?

    Your food looks delicious! I always go through phases where I’d eat the same thing for meals for a period of time too… it’s easy and convenient.

    those kids are too cute! haha! loooove pizza! it’s too easy to fall into the ‘same thing trap’ when you’re busy because you know it works in the amount of time you have!

    I eat any kind of carb when I’m stressed. LOADS of popcorn that I cannot pop into my mouth fast enough! I’ve been hesitant to try the mango pizza- it’s just… mango on pizza? Seems crazy to me! Hope the stress resolves itself peacefully!
