Yesterday morning I awoke and just knew I wanted to do a double header at my gym. I’m going out of town, so I won’t be able to attend to my regular classes for awhile.
Breakfast
I fueled for Group Power and Group Centergy by pouring myself some Raspberry Galaxy Granola. I ate it with vanilla hemp milk and Smart Balance crunchy peanut butter.
Galaxy Granola
Not too long ago, Galaxy Granola sent me 3 varieties of their granola. Galaxy Granola is baked in apple sauce, rather than oil. The nutrition info is also pretty stellar for a granola.
Galaxy Granola contains NO:
- Artificial ingredients
- Oil
- Corn syrup
- Processed sugar

Lunch
Lunch was leftover salmon and veggies from Copper River. After eating this, I felt sick all over again.
Stephen and I decided to go for a walk to try to burn off our “blah” feeling.
I took him to a favorite running location. One of the houses in the neighborhood typically has a beautiful gold retriever in the yard, and I really wanted Stephen to see it. But alas, there was no dog, and this was our second fruitless trip to see him this weekend. Boo!
Dinner
Stephen has been begging me to make blueberry pancakes for weeks now. I know how to make a mean oatmeal pancake, but blueberry pancakes, I’m clueless about!
I kind of made the recipe up as I went, and it turned out great!
Blueberry Pancakes with Mixed Berry Topping
makes about 10 pancakes
Ingredients:

2 cups whole wheat pastry flour
-
1 tsp baking powder
-
1/2 tsp baking soda
-
1/4 cup NuStevia Stevia Baking Blend
-
pinch salt
-
2 1/4 cup vanilla hemp milk
-
2 eggs
-
2 TBSP ground flax meal
-
3 cups frozen blueberries (not thawed)
Directions:
-
Combine dry ingredients in large mixing bowl. In a separate bowl, combine wet ingredients (this includes blueberries) and mix. Add wet ingredients to dry ingredients and combine, being careful not to over mix.
(The batter was a beautiful purple color!
- Coat baking pan with desired oil, and heat to low.
- Place 1/3 cup batter on skillet. When pancake starts to bubble, it’s time to flip.
(Stephen was, of course, very precise with his pancake flipping.)

- Once pancake is thoroughly cooked, remove from heat, and serve!
- Top with Mixed Berry Sauce. (Mixed Berry Sauce recipe below.)
Ta Da!
Mixed Berry Topping
Ingredients:

1 1/2 cup blueberries (frozen)
-
1 1/2 cup blackberries (frozen)
-
1 1/2 cup strawberries (frozen)
-
2 TBSP agave nectar*
Directions:
-
Heat all berries and agave nectar at medium-low temperature on the stovetop. Leave the cover off, so water can evaporate.

When berries thicken to desired consistency, serve.
*If I were cooking for myself, I would’ve left out the agave nectar. But poor Stephen got very concerned when I told him I was going to make a syrup without sweetener.

Enjoy the rest of your Sunday! Stephen and I are off to our favorite Mexican restaurant. It hasn’t let us down in the past, so I doubt it will be another Copper River experience.
After dinner, my guess is that we will engage in further couch sitting. We may even throw last week’s episode of LOST in the mix.

Okay, first of all, pancakes for dinner every so often is a MUST! Those blueberry pancakes look completely out of this world…especially with that berry topping! I think I could eat a bowl-ful of that alone
And YAY for Galaxy Granola. They sent me some a few weeks ago as well, and I seriously love it. I was never a big granola eater before because it just didn’t seem worth it (200 calories for 1/4 cup, seriously?). But Galaxy Granola seems to give more bang for a buck, you know? I like to eat a small bowl of it with almond milk for a little dessert
Mellow Mushroom always impresses me. I don’t usually get the pizza, but their sandwiches and salads are really good.
Whoa, I like how the batter is bright blue but the cakes are golden!

I find that blueberries don’t even need sweetner – If I want them as a syrup, I just microwave them for a minute or so and voila

my “no fail” restaurant is season’s 52. it’s delicious, fresh & everything on the menu is 475 calories or less. gotta love it!

Cracker Barrel is my favorite no-fail restaurant. I go there all the time when we travel, but the closest one to my house is 2 hrs away. Love their food though, its always so good! I know there are a lot down in the Carolinas!
