This week is a big week for me!  I have many, many things going on.  One of which is my final presentation for graduate school.  I’ve completed my PowerPoint, but I haven’t practiced yet.  I wonder when I’ll have time to do that?

  • sunflower seed butter

  • unsweetened coconut
  • homemade coconut butter.

Leftover tuna pepperjack mac n’ cheese.  Stephen made this for us on Sunday night.  The leftovers are outta control!

 

What is on top?  You may ask.

DORITOS® 2nd Degree Burn Fiery Buffalo

These!  I crumbled about 5 chips on top. 

 

Gross, you say?  Don’t knock it till  you try it. 

The truth is Stephen bought these chips this past weekend.  When he was eating his dinner, I saw him put the Doritos on top of his macaroni.  I definitely crinkled my nose!  But then Stephen made me sample his concoction, and it really was good. 

 

Of course,  I didn’t admit the full extent of how blown away I was by his crazy idea.  I just kinda nodded my head and nonchalantly acknowledged his creation.

Health bloggers don’t eat Doritos, do they?  ;-)

 

I tempered the above with this tasty salad.

I combined some leftover jasmine rice with brussel sprouts (one of my favorite veggies) and topped it off with tahini and sriracha. 

 

Tahini + Sriracha = Heaven.

It’s an unexpected combo that definitely works!

Question: What’s the best movie you’ve seen lately? I can’t say I’ve seen anything great in awhile.  This past weekend Stephen and I watched Precious.  I had been dying to see it for awhile! 

I found the acting superb.  It was not cheesy like many dramas tend to be.  However, I was a bit disappointed with the movie as a whole.  Precious had an amazing story, but I was left untouched.  I cry in almost every movie I watch, and I only cried once during Precious.  Something is wrong with this picture…

    Good luck with your defense! We just saw “Date Night” and it was super cute! And a few weeks ago, we watched “Up in the Air” which was surprisingly very good!

    I hate Doritos. Not because it’s “junk food” but bc I just can’t stand tortilla chips, haha. I prefer Cheetos! But you’re right, even Doritos can be part of a healthy diet in moderation! Go you!!!

  3. Oh my gosh, this post just reminded me…my aunt used to make this BANGIN’ salad with Doritos in it!! It was a pretty basic salad with ranch dressing and Doritos and it was out of this world. I seriously need to put a request into her about that one…

    Ahem, clearly I’m on your side when it comes to eating “junk” food, if you couldn’t tell :P

  9. I have been wanting to see PRecious, it’s on our list of “must sees”. I don’t cry easily at movies though, so I won’t be surprised if I don’t cry. We did just see Up, and it was SO good, yet sad. But of course, I didn’t cry!

    LOVE your DOrito’s creation!! Noodles and tuna are the best combo, and with the added crunch of the chips, it’s like a mock tuna noodle casserole!

    I just read your question on my blog. The maltodextrin does count as fiber, but it shouldn’t because the science and research just doesn’t show that it’s similar to real, intact, dietary fiber. As for chicory root, it should count as a prebiotic, NOT fiber. But of course many people count it as fiber. The research doesn’t support it’s role as being similar to real dietary fiber.

  11. LOL. I haven’t watched precious…maybe you didn’t’ cry cause you were too disturbed to cry?!? Anyways I heart me some Doritios..you know how I roll 50/50 style…50% healthy…isn’t that what they say? jk. Anyways good luck lily on school..you are giving me bad flashbacks!

  12. Its been a very long time since we have seen a movie… to be exact.. we haven’t seen one since Avatar. We saw it at IMAX and 3d… it was a pretty good movie :)

  14. I haven’t seen a good movie in quite a while, the last I saw was Avatar! This weekend I watched “Date Night” and although it gave me a good laugh, I did not think it was worth the $11 movie ticket.

    I have been wanting to watch Precious since I read the book but I just haven’t gotten the chance.

    I never see movies like ever! I watched “He’s Just Not That Into You” in segments a while ago and it was funny!

    Not going to lie, the idea of those doritos gross me out in general. I don’t know why but spicy chips don’t work for me
