I am so sore!  My leg pain rivals post marathon soreness.  Plus my abs, lower back, upper back, and bum are very tight and painful.

I’m assuming my soreness has something to do with this past weekend’s workout schedule:

Friday- 5 mile run

Saturday- 1 hour Body Attack class

Sunday- 1 hour Body Pump class

              1 hour Body Flow class

              3.5 mile run

Why in the world did I do so much exercise on Sunday?  I think I’m crazy…

I did the Body Pump/Body Flow combo on Sunday morning.  Then I drove 3 hours.

When I arrived home, my legs were so tired of being cooped up in the car, and I was just itching to run!  I set out to run a quick 2 miles.

But then I got lost..

So it took me 3.5 miles to find my starting point.  Oops!

Now, here I am today.  SORE!  But it was totally worth it.  I wish I had 2.5 hours to exercise every day!  (I’m totally not kidding.)

I think a nice, stretchy Yoga Download is in my evening’s future.

[How much would you exercise if you had no other commitments?]

Breakfast

This morning I ate breakfast at the office.  Last night, I prepped a week’s worth of Irish Oats.

I’ve had an empty Trader Joe’s Sunflower Seed Butter jar saved for a week now.

I added some warm oatmeal to the jar this morning.  I kept the lid screwed on during my 15 minute commute.  When I arrived, I added the Ziploc bag of add-ins to the mix.

I had:

unsweetened coconut

dried cranberries

Milk & Honey Granola-Pumpkin Spice Mix

Lunch

Health Valley Vegetarian Chili

I had some of this soup.

But it was terrible!

It was sweet!  Chili is not supposed to be sweet.  I did enjoy the carrots though.

Whole Carrots

Joanna commented on this post about my whole carrot consumption.  Here’s the deal:

1) Whole carrots are less expensive than shredded or baby carrots.

2) I’m lazy.

So, I buy whole carrots.  But I never chop or peel them.  I simply cut off the ends and eat away!  I’m all about efficiency.  Hence, I create salads that look like this.

lunch

Pure laziness and frugality all rolled into one, folks.

Dinner

sweetpotato butter

Two eggs sprinkled with jalapeño salt, snap peas, and toast with sweet potato butter

Birthday Treat

Look what my co-workers at the office had waiting for me this morning!!!

bi-lo cookie cake

(I got a picture after one side had already been devoured.)

bi lo double layer cookie cake

Look!  It’s double-layered!  Trust me, it was goooooood.

Guess what?  I got to take the cake home at the end of the day!

I cut it into individual slices so that I can have it for dessert for the next two weeks.

Thirteen pieces of this cookie cake…

I think I’m good on dessert for awhile. :-)

A Package

Pom Wonderful 100% Pom Juice

In other exciting news, I arrived home to a package of POM Wonderful at my door.  I have been dying to try this juice for some time now, and I can’t wait to experiment.  Thanks, Ryan!

Have a great evening, friends!  My muscles are dying for a yoga stretch!

Question:  What are some of your lazy food prep habits?

  1. Oh my gosh I am so jealous!! Cookie cake is my all time favorite and I so jealous you have enough for 2+ weeks!!! Do you need a roommate?

  2. oh yum that double-layered cookie cake looks awesome!!!

I love working out and would be thrilled to have 2.5 hours to workout too. I’d also love to try body pump!

  3. haha I do the same thing with carrots! Unless they have a lot of extra “hairs” on the outside…you know what I mean

No wonder you’re sore! You attacked, pumped, flowed, and ran in 24 hours lol

When I’m lazy…I just get a sandwich or meal out. I like whole carrots better, too, because of the price. But I have to peel them, because the grocery store I buy my produce from is…sketchy at best.

  5. Katherine says:

yuck sweet chili- probably to compensate for less salt.
    my lazyfood- frozen veggies
    Happy BDay!

  6. katie says:

    lazy food- BREAKFAST FOOOOD! aka..oats!
    love your rando dinner!

  7. Run Sarah says:

Totally am the same way with carrots, I never peel them. Cookie cake!! So delish, best of both worlds.

  8. Wow girl,, you kicked some butt on Sunday! No wonder you were sore!!I’d looveee to be able to exercise for 2.5hrs a day…I’d run, swim, walk, do weights…it’d be amazing!

  9. LOL at the cookie cake! I’ve never seen a double layered one and I would NOT even take it home with me cause it would NOT last 2 weeks!!! Not even 2 days even!!! And your Sunday workout sounded like a bootcamp!!! hahah no wonder you are so in shape. ;) my lazy prep habit is i leave the skin on cucumbers and potatoes…i say i like the texture but it might be cause i’m lazy.

  10. cookie cake!! YUM!!

lazy food habits? I dont have any! i grab whatever i see in the fridge and just eat it out of the container!!

  11. Lee says:

    I love cookie cake too.

I eat food out of the container sometimes. I guess that’s lazy.

  12. lol, love the carrots on the salad. Too funny! I read somewhere that baby carrots are one of the biggest ripoffs out there. I am STILL super sore from my hill run on Sunday. Damn girl, that is a TON of exercise on Sunday :) If I had unlimited time, I would probably work out for 1.5 hours a day. Most likely :D

  13. brandi says:

whole carrots ARE so much cheaper! We always buy them whole, too..

  14. GREAT job on the workouts, my dear! You are so so great!

I love the cookie cake- I can’t believe it’s double layered!!!!! I would love to share it with you and the idea of a nice frozen slice sounds really good to me. I bet I wouldn’t even thaw it. Sometimes I make chocolate chip cookie dough, roll it into balls and freeze them for a sweet treat! Love that stuff!

I love to make big batches of meals on the weekend to enjoy throughout the week. I also much prefer whole carrots to baby ones. They’re sweeter somehow?

    Have a lovely day!!

  15. Tina says:

That is a LOT of cookie cake! But I know I wouldn’t complain about having that available for a sweet treat for awhile. Yum! Also, it’s no wonder you are sore. That is a ton of working out. Ouch. LOL

  16. When I’m feeling super lazy I usually do something sweet potato related or a peanut butter sandwich. These two lazy habits have recently joined forces to become sweet potato topped with peanut butter. Heaven.

  17. Kat says:

Oh my gosh, cookie cake is one of my all-time favorite things! And a double-layered one? Holy crap. I think I missed saying this to you, so HAPPY BIRTHDAY!!

  18. Susan says:

What did you think of body flow?? I would work out for probably 2 hours a day if I had time to. Wait, maybe more. I could break up my cardio, strength and stretching throughout the day. That could easily add up to three ;)

I’ve never had cookie cake, but I’ve just always assumed it’s the stuff dreams are made of.

Funny, I buy baby carrots because I’m lazy! I have a bad jaw, so biting into full ones is a no-no for me. I’m lazy about dirtying dishes. I often just wipe of the same plate and use it all day, or eat out of empty containers. Speaking of which – transporting the oats in a closed jar is nothing short of genius ;)

  19. Ashley says:

Hahahaha I’d have to send that much cookie cake to work with the fiance or I would gobble it all up! I’ve never seen a double-layered one. I’m drooling over here!

  20. i am very lazy in the kitchen! i never wash anything before i eat it. bad i know!
i am super sore today too……..
