Tonight I’m going to share one of my favorite baked goods with you all!
My mom made these Wonderful White Chocolate Peanut Butter Cookies a couple of weeks ago, and I’m still lusting after them.
Her inspiration came from Alexis Stewart’s blog, and the original recipe comes from Vanilla Sugar.
Little known fact about LHP and LHP Mom: When I was a child, LHP mom and I watched Martha Stewart Living together every week.
My mother is very Martha Stewart-esque. I’m still working on my domestic skills.
Really, I think the only reason I watched the show as a 9-year-old was because Martha had cats.

I remember that Martha liked to pretend as if her cats enjoyed having their teeth brushed.
Martha, you ain’t foolin’ nobody. No self-respecting cat likes having their teeth brushed. Not even your perfect little Persian. (Sorry, that video is terrible quality.)
But I digress. Let’s get back to these cookies.
Wonderful White Chocolate Peanut Butter Cookies
(adapted from Vanilla Sugar)
Ingredients:

1 cup White Chocolate Wonderful Peanut Butter
-
1 cup turbinado sugar
-
1 egg
-
1 tsp baking soda
-
2 TBSP whole wheat pastry flour
-
1 tsp sea salt
-
1/2 cup white chocolate chips (I used Ghirardelli)
Directions:

Preheat oven to 350 degrees.

Mix flour, baking soda, and salt in small bowl.

In a separate bowl, combine peanut butter and sugar until well combined.

Beat egg, then add it to the peanut butter/sugar mixture.

Combine the flour/baking soda/salt mixture with the peanut butter/sugar mixture.

Cover bowl of the final dough mixture and cool in refrigerator for at least 2 hours.

Remove dough from fridge and grease cookie sheet (I always use coconut oil).
-
Roll dough into TBSP sized balls and place on greased cookie sheet.
-
Make a small thumbprint well on the top of each cookie.

Bake cookies for about 3 minutes.

Remove from oven, place about 4 white chocolate chips in well.**

Bake cookies for about 7 more minutes.

Let cool on the baking sheet for at least 15 minutes before removing. (Cookies will not hold together until completely cooled!)
** Check out Vanilla Sugar’s blog for pictures of how the cookie’s well should look after baking. My mom’s cookies did not turn out quite as aesthetically pleasing. However, I’m not certain that white chocolate will pool like milk chocolate.
Pretty or not, these babies taste scrumptious!
