One day is enough to mope.
After that, you just gotta suck it up and move on.
And finally, make attempts to tackle one half of the laundry basket.
But sometimes…despite all your efforts to get your apartment (and life) back in order,
you still want to indulge a little.

Breakfast
Delicious apple cinnamon oats. Topped with some of the last precious granola given to me by Diana.
Lunch
Kale and veggie pasta
The kale was sautéed in grapeseed oil and lemon juice and served with roasted pine nuts.
The veggie pasta was topped with a rich concoction made from mung bean hummus, tahini, nutritional yeast, and roasted red pepper soup soup.
Have you ever had this??
Pure delight in a box, this soup.
Dinner
I decided to try my hand at a tempeh recipe.
Tempeh is a soy product. It’s made from whole soybeans and undergoes a fermentation process.
Doesn’t it just sound delightful?
Nutritionals are not too shabby.
Tempeh, itself, tastes a lot like tofu to me.
But tempeh with this marinade…
Looks pretty. But tastes like pure salt. Waaaaay too much soy sauce.
But look at the peanut sauce! I did enjoy that edition. Without its presence, I would’ve had nothing to consume alongside the tempeh to mask the taste of brine.
Budget tip aside: cooking and baking with peanut butter from this monstrosity of a jar (it’s 4 lbs!) will save you a lot of money. No need to waste one whole cup of the pricey pb: save the Maranatha for your oats!

I typically only buy berries or other expensive produce when they are on sale.. I also buy all of my toiletries, paper towels, napkins, etc at Walmart. It’s sooo much cheaper there than any other place I’ve found.
I cut coupon when I can, but that’s not very often b/c I’m just not that motivated. hahah
I’m glad things are looking up! I love a clean house, it instantly makes me feel more positive.

Peanut butter sauce…tempeh…two beautiful things right there! I don’t think tempeh taste like tofu at all, I think it’s totally different!?

I don’t have any great budget tips as if I buy in bulk…I tend to eat in bulk. I have issues!!!!
I’m trying my hand at tempeh today so we’ll see how that goes! And all i cna say is coupons coupons coupons! You can really find them everywhere if you look, even online and such.
I love tempeh…it stole my heart away from tofu about a year ago!

Great tip bout using cheap pb! I always use my expensive one! My save money tip is to look at the supermarket’s flyers for deals! They always have coupns and stuff!
nothing like some good blue icing for the soul. I always feel so much better when the dishes are out of the sink and everything is clean!

I always want to like tempeh, but never do.
Where did you get the veggie pasta? Looks good. As for budget, I go with a list and without the fam. If the kids and husband go with me, there is no budget!
I usually buy things in bulk, and I always almost only buy things that are on sale.
That veggie pasta…looks AWESOME. I would love to try them! They sound really healthy, too!
I’m actually creating a presentation about budget tips, or eating healthy on a budget. I’ve come up with some good ones, like always review your coupons before going to the store! Sometimes they say “Save $1.00….when you buy 10!!” haha, I’ve been sucked into that one quite often.
I love the TJs tempeh, I buy it all the time. I also marinade in soy sauce, but I use the low sodium soy sauce, it’s great!
