Hey everyone!
Sorry I kinda left you hangin’ for a few days. Stephen has been in town, and we’ve been spending some blog-free quality time together.
So, let me catch you up! Let’s start with Friday:
Friday
Stephen and I decided to take a hike on a local trail. I had actually never known that my current city has a wealth of scenic routes until I met @MyFitnessLog and her sister at the South Carolina blogger meet-up. Thanks to them, my eyes have been opened!

Did you know these are edible? I had heard they were poisonous, but this is actually not the case!

This trail even has a marsh.
I would expect this in Charleston.
But a marsh in the Upstate?
Is very unexpected.
After our walk, we were hungry. So we decided to hit up one of our favorite Thai restaurants.

Saturday
I decided the weekend was as good a time as any to try out my new juicer!
Behold!
My new Breville!
Into my new juicer went…
2 celery stalks, 3 small carrots, 1 small cucumber, 1 green apple, 1 bunch parsley, and 1/2 a lemon.
These veggies created a tasty, beautiful green juice.
Here’s the leftover pulp. I stored it in the freezer, and I have intentions for its later use.
*FYI: The Breville Juicer manual recommends placing a plastic bag in the discard container. It makes clean-up just a tad bit easier.
In summary…I love my juicer!
Faith’s Wedding Shower
Remember Faith? She has been my buddy for a long, long time. In fact, she is probably my only middle school/high school friend that I keep in contact with regularly.
I still have shoeboxes full of handwritten notes in my old bedroom’s closet. They are filled with notes from Faith! Every time I go home, my mom encourages me to throw them out because they are a fire hazard. I just can’t bring myself to get rid of them! They are full of so many fond memories. And written on some super cute Hello Kitty stationary.

I found this picture on the internet, but I’m certain I had this exact pad at one point in my life!
Yesterday was Faith’s wedding shower. She is getting married on July 3rd, and I’m so excited!

This is a cookbook with a compilation of recipes from the shower guests. Each person was asked to submit 1 dinner and 1 dessert recipe.
My contributions included Wheat Berry Chili and Wonderful White Chocolate Peanut Butter Cookies. I hope Faith and Cole enjoy these recipes!
Here’s Faith’s new apron. I simply cannot accept that Faith is soon going to have a different last name!

I’m not a fan of veggie juice, so I don’t have any. But I heard that you can use the pulp to make crackers?
What a great shower! It definitely is a surreal feeling when an old friend gets married! When she gets a little baby, that would be yet another weird feeling!
I have a juicer but I’ve hardly ever used it…mine takes so long to clean! Kath (at Kath Eats) often juices with great results and she always uses the pulp too
you could probably bake with it! Or make it into a healthy pancake or something….

when my bff got married it was so bittersweet. I was so happy that she found the love of her life but I knew her life was entering a different chapter..Okay..totally downer right? Anyways, I love how Stephen and you try to do outdoorsy things together..and how he lets you pick the restaurants (I assume)

That cookbook idea for the bride is really cute.
I like making juice out of what you used except without celery. And I have no idea what to do with the pulp. I’m looking forward to hearing your idea for it. Soup?
