Sunday

Sunday (The 4th of July) I awoke once again to the smell of sweet, savory buckwheat waffles

buckwheat waffle

My mom’s waffles were such a hit that she made them again for Sunday morning breakfast.  I’m one lucky gal to have been able to eat these two mornings in a row!

aloe vera juice

My mom and I each had one serving of Lily of the Desert Aloe Vera Juice to complement our breakfast.

aloe

Thankfully one serving of aloe vera juice is only 2 ounces!  Let’s just say, it’s taste is quite unique.

People generally drink aloe vera juice to aid digestion, clean harmful bacteria from the colon, and improve circulation.

Also, here are some of the benefits listed on the back of the juice bottle:

As far as I can tell with my cursory Google search, not all of the benefits listed above have been supported by research.  Nonetheless, I do find the potential benefits if aloe vera juice intriguing, so when I saw a large bottle of it at Amazing Savings for $3.99, I decided to snatch it up and give it a try.

After a delicious breakfast, Stephen and I got in the car and headed back to Charleston for the week.

Unfortunately, Stephen and I spent most of the 4th in the car.  When we reached Charleston, it was already evening and we weren’t really feeling participating in any festivities.  So……

We went to the movies instead!

Let me clarify here that I am NOT a Twi-Hard.  I happened to read the books, and I thought they were ok.  They are certainly no Harry Potter!  And honestly, if you think the Twilight series is the best set of young adult books you’ve ever read, I think you need to do a lot more reading.  (Just a personal opinion- I’m not trying to offend.  I know these books have one large following.)

That being said, I think Meyer’s storyline translates to the movie screen very well.  I’ve thoroughly enjoyed each of the movies, and Eclipse has probably been my favorite installment thus far.

Monday

On Monday, I attended an Express Body Attack/Body Pump class, and then I spent the rest of the day with Stephen.  Notable facts about Monday were:

1) I tried Siggi’s for the first time.

56

Siggi’s is a very thick yogurt, and it’s quite tasty.  At $2.50 the price is a bit outlandish though.  And I thought Oikos was expensive!  Also, before trying this grapefruit flavor, be mindful that it tastes quite a bit like the actual fruit – bitterness and all.

2) I cooked a FANTASTIC dinner.

calzone

Check out this calzone!

calzone crust

Expert edges and all.

 calzoneinside

This calzone was stuffed with spinach, tofu, mozzarella, parmesan, and basil.  This is most definitely Stephen’s favorite dinner of the year!  I’ll have to post the recipe if you all are interested.

3) I baked a healthy-ish dessert.

1

A peanut butter/white chocolate chip blondie.  Ingredients included whole wheat pastry flour and wheat germ.  In retrospect, I wish I’d added a bit more demerara sugar.  These just didn’t taste dessert-like enough for me.

***

Well, I’m unplugging just in time for Bethenny Getting Married.  In previous seasons of The Real Housewives of New York, Bethenny was one of my least favorite characters, but now I’m starting to enjoy her.

Believe it or not, LuAnne used to be one of my favorites!  (Currently LuAnne is probably at the bottom of my list.)

Question: Do you watch any of the Real Housewives series’?  Which one is your favorite?  Least favorite?

My favorite is New York.  This past season just can’t be beat!

My least favorite is Atlanta or New Jersey.  I don’t know how much more of the ‘gang up on Danielle’ story I can take.

  1. You KNOWWW I love me some RH of NY!!! Why can’t we live near each other and eat blondies all day and watch it? Wait..that wouldn’t be healthy. And I’ve stopped watching RH of NJ..it’s like pure trash and so dirty…danielle looks like steven tyler!! And Glenn LOVESSS the Harry Potter books…you can bond with him if we go to Charlotte this winter. :) Anyways…I’ll stop my novel!

  3. Lily says:

I really hope you get to go to the conference in Charlotte so that we can meet! Any chance you might move to South Carolina? Our pharmacies are probably less busy….

  4. [...] This post was mentioned on Twitter by Barbara Wilson, Lily Catherine. Lily Catherine said: New Post http://bit.ly/deWr4r Do you drink aloe vera juice? Or watch Real Housewives? [...]

  5. Jessica says:

I love Siggis – I think it tastes like cheesecake. But it IS so expensive!!!

  6. Glenn is 70% sure he is going to be in charlotte for a month…if he likes the hospital there he might apply there for his residency!! But then if I live near you that means I have to be in shape like you…it’s like…”your trap” or something…jk! :)

  7. I’m a total Bethenny fan! I love her healthy dose of sarcasm. Her show is one of my guilty pleasures!

  8. I’m totally addicted to that series! I love NY also—I’m team Bethany : )

  13. Why does my google reader never tell me when your blog updates!!?? ARGH!
The eats look lovely – that calzone looks SO pro!
As for Twilight, I haven’t seen it yet, but I really can’t wait! I don’t think the books are that well written and I think the acting is pretty poor…but they’re so addictive :P

  14. sophia says:

Ooh you are lucky indeed to have pancakes cooked for you like that. Your calzone looks fantastic! Do post the recipe if you would! :-)

  15. Nicole, RD says:

I don’t watch Real Housewives – no :( Siggis always gives me sticker shock and I’ve never had the desire to spend that much :( I’m sure it’s wonderful at that price — better be! And that calzone…YUM! That is one serious calzone!

  16. Katie H. says:

I am quite impressed with your calzone skills! Very nicely done. I don’t consider myself a twi-hard but I definitely loved Eclipse. Team Jacob all the way!

On another note, how on earth can I add you to my reader? When I search for your blog the only subscription that comes up is one that hasn’t been updated since December. Am I missing something?

  17. That peanut butter white chocolate chip blondie looks AMAZING. Yum, I love blondies!

So I see you are taking aloe vera juice? I’ll just point out that you are correct about the lack of science, there really isn’t any to support it. You are probably experiencing a placebo effect. Also, there are some dangers invovled (I don’t know off the top of my head, my supplement book is at home!). Just be careful and don’t take it for too long, I would say.

  18. Heidi says:

I am a closet Housewives fan myself. I think the original – Orange County – is my favorite. I am a bit perturbed that they’re doing yet another round with the DC Housewives. Eventually, it’s going to be too much! Dontcha think? I wish it were still just the OC and NY series!
Do you mind posting the Blondie recipe? It looks and sounds so great!

  19. eatingRD says:

wow, those waffles look tasty and that calzone is perfection. looks good! I’m not a Twilight fan really either. Have a nice weekend!
