Good morning!
Stephen is in town this weekend, and we are milking this weekend for all it’s worth. Lots of cooking/baking/movie watching.
Most importantly…we are just plain enjoying this opportunity to relax.
And of course, sleep in! Missing the hours of 6 and 7 a.m. every once in awhile is just fine by me.
What better way to celebrate a good night’s sleep than with a special breakfast?
Having the luxury of spending more than 3 minutes on breakfast prep is something I long for each morning. (Yes, I choose sleep over elaborate breakfasts each weekday a.m.)
I purchased this Belgian waffle maker 3 weeks ago, and I have yet to find time to use it.
Until today!
Black & Decker Belgian Waffle Maker, let me introduce you to Bob’s Buckwheat Pancake & Waffle Mix.
I found this Bob product at Amazing Savings last weekend. Remembering the tastiness of my mom’s buckwheat waffles, I knew I must try my hand at recreating her delicious magic.
Stephen requested blueberry waffles.
With strawberry syrup.
I requested coffee.
In my apartment, coffee is reserved for the weekends. Tea is the preferred caffeinated beverage for the weekday grind because it’s just a few minutes (seconds?) faster to prepare than coffee.
Usually I take my coffee with a splash of soymilk and a packet of stevia. Unless of course, I’m imbibing at Starbuck’s. In which case, I will be consuming a nonfat chai latte.
This morning, I made my own latte, which didn’t cost a lot-(ay?).
Enter: Bolthouse Farms Vanilla Chai Tea
This ingredient list has to be better than Starbuck’s, right?
Lots of sugar in this drink, but it tastes so goooood.
To spice up my morning coffee, I simply mixed about 3 ounces Vanilla Chai with 5 ounces coffee.
Faux latte deliciousness.

A note about Bob’s buckwheat waffle mix:
These waffles did not taste nearly as yummy as the waffles my mom made in July. Thank goodness for the added sweetness of the blueberries! Otherwise, Stephen and I agreed the waffles would’ve tasted like cardboard. Thankfully the strawberry syrup perked up the taste of these waffles as well.
(Sorry to hate on you twice in one week, Bobby.)

To make strawberry syrup, simply leave out the blueberries and blackberries.

The occasion is my nephew’s 8th birthday.

Aw, I’m sad to hear Bob didn’t come through with his pancake/waffle mix. I am a big fan of some of the other products, especially the polenta/grits. On days off I usually end up sleeping PAST breakfast, so I never get elaborate breakfasts unless someone else is cooking.
Sleeping in+ waffles= amazingness ( even if they did not taste THAT good)
I only drink coffee just to be cool. I love tea
that is an awesome way to make an at home latte!
Yum, I love homemade blueberry waffles. I use that Bolthouse Farms chai tea latte stuff to make my hubby’s smoothies. I haven’t tried it yet, because I know I’ll get addicted

omg! those are the most adorable cupcakes…my friend is obsessed with pirate stuff (yes he’s 27) so those would be perfecto for his bday or a random gift! BTW your apt porch is that nice? WOWZA!! PS. I use to get that vanilla chai for glenn when we first started dating..he would consume one a day…thank goodness for his extreme workout routines or he would have gained massive weight!

I do try to take the time in the morning to make scrambled egg whites. It’s five or 10 minutes for a filling breakfast, but it doesn’t always happen (that’s when I go for Greek yogurt).

I have to say that I am not a fan of Bob’s red Mill products or buckwheat. They always seem to be lacking in flavor. However the strawberry syrup that you made Stephen looks like it would seriously improve any pancake or waffle!
My favorite part of this post (ignoring my sudden craving for waffles)? The schmoopy mug! Y’all are so cute!
Those waffles look fantastic! It’s a shame the mix wasn’t the best. The strawberry syrup definitely looks like a winner though
