Store Bought Pumpkin Pie

Greetings from two lucky cats!

Well, one of the two is only lucky sometimes.

 

I wasn’t feeling as if Link’s presence in my apartment was fortuitous after I came home from the work today.

And that, my friends, is why this cat is on a behavior plan.

So, last weekend when I arrived in Charleston, Stephen surprised me with some Cupcake goodies.

 

I wanted to surprise him upon his arrival with his favorite treat….pumpkin pie.  I saw Avery’s vegan, raw pumpkin pie recipe and I knew it was a must try!  Last Thursday night I prepped this recipe so it would be ready to eat on on Friday evening.

The crust is made from almond meal, dates, and agave.

I ran out of almond meal, so I used half almond meal and half spelt flour.

 

In goes the filling.

Freeze the pie, pull it out of the freezer a few hours later, and voila!

 

Stephen called when he was driving to my place, and I let him know there was a surprise waiting for him. 

 

When he arrived, I giddily asked if he was ready to see what I’d concocted.  I pulled the pie out of the fridge, lifted the plastic wrap, and smiled in anticipation of Stephen’s reaction.

 

Upon seeing the pie, his face fell. “What is this?” he asked. 

 

“A vegan, raw pumpkin pie!” I exclaimed.

 

With the most sorrowful look in his eye, he moped, “Why would you think I’d like a vegan, raw pumpkin pie?”

For future reference, I prefer store bought pumpkin pie.”

Despite the pumpkin pie debacle, I decided to show my face in public with this freak I call my boyfriend.

Concert face

 

In my life, I’ve attended zillions upon zillions of concerts.  You name the rock band, I’ve probably been there. 

 

On Friday night’s agenda was Red Jumpsuit Apparatus.

and headliner, Fuel

AKA the Brett Scallions Band.

He is the only member left in the band.  Interestingly enough, for a few years there, he was the only original member not in the band.

 

I guess Fuel realized they weren’t doing too well without the sound of their former lead singer, so they gave Brett S. full rights to the name, and he is now touring as Fuel with a completely different posse.

This was my 3rd time seeing Fuel.  They were one of my middle school/high school favorite bands!  Seeing them–I mean Brett– again was so nostalgic.  Sadly they did not play the Tommy Lee cover of Sister Mary Innocent nor Mary Pretends.

I fear I will never feel too old for concert-going.  Stephen will wear out long before I.  He was not a fan of being so close to the front.  Granted, annoying people were spilling their beer on us, and our ears were ringing for 24 hours post show, but I find these things to be part of the experience. :-)

So to redeem myself for not supplying Mr. Stephen with a store bought pumpkin pie and for dragging him to a concert, I knew I had to come up with something good.

 

Stephen is a pumpkin freak.  Although, he admits he’s not really in love with the pumpkin as much as the associated spices.

So I made him pumpkin waffles inspired by blogger friend Ashley.  Basically, I added pumpkin and spices to the Arrowhead Mills Whole Grain Pancake/Waffle Mix, and the result was amazing.

 

I’m fairly certain they put me back in Stephen’s good graces.

 

But it turns out, I owe Stephen a lot more than pumpkin treats.

While driving on a less than wholesome highway, one of Ollie’s tires let out a ‘POP!’  Stephen pulled us over into an Econolodge parking lot. 

 

The kind motel owner let Stephen borrow a tire iron so Stephen could put on a spare.  Turns out, my spare really needed some air, so Stephen and I walked a mile to the nearest gas station in order to fill it with enough air to get us back to my apartment. 

 

Without Stephen, I would’ve had no choice but to call a tow truck.  I was so lucky to have him around for aid in this situation.

 

Maybe I’ll present him with a Bi Lo pumpkin pie next weekend.  Maybe.  A man can only hope.

    Before you put poor Link on a plan, don’t you need to give him a psych test first? Whata cuts rascal!

    I am with Stephen; a store-bought pumpkin pie, or maybe even a REAL home-baked pumpkin pie sounds really, really good.

    Another concert? Poor Stephen! Remember that you were once able to convince your Mom to attend one of your concerts, but you knew better than to try to convince your Dad.

    Good luck on the behavioral plan, my cat laughs in my face when I make an attempt. She’s now immune to getting sprayed with water, so I don’t know WHAT to do at this point!

  12. HAHAHAHHAHAHAHAH. I can’t believe he said “what is this?” did it look THATT healthy? If it makes you feel better I would have totally tried it AND you look gorgy in that photo at the concert…SO GLAD I got to sleep with you. And btw don’t “hate” on Stephen for the whole pie fiasco…at least he can change a tire! Glenn acts all smart and sh*t but he has NO clue about “dude” stuff…like changing tires and sh*t! And rock concerts? I’m totally too old for that shizzle..I enjoy POP and acoustic now…I’m “deep”

    FUEL! They put on an amazing show and I love seeing them in smaller venues.

    Hee hee, although your raw pie looks delish, I still prefer a cooked pie. I suppose I’m like Stephen on that one, though not store-bought, home-baked is perfect!
